Thanksgiving leftovers
I am hosting my first family Thanksgiving dinner (with lots of help from my girlfriend). What should I do with all of the leftover turkey. I'm buying big because I'd rather have too much than not enough. I don't like casseroles and don't want just to reheat a slice or two. Any creative suggestions?
You can use the stuffing, cranberries, and turkey to make an exceptional, crunching hash.
I *think* I got this from The Turkey Cookbook by Rick Rodgers -- the whole recipe should be in there. It's called something like All-in-One Gravy Loaf.
Let dough stand to thaw. Combine mashed potatoes, green beans, crispy onions, yams, gravy, and most importantly...chopped turkey (and anything else from you leftover stash you think would taste good). Set aside. Cut circles out of the pastry dough large enough to fit inside a muffin tin (you'll need two circles per muffin well). Press one circle of dough into each tin forming a 'pie crust'. Spoon in enough filling to fill 3/4 or more full. Take second circle of dough and lay on top, pinching the edges of the top and bottom together. Bake at 375 degrees until golden.
A nice way to reuse your Cranberry Sauce (without having to doctor it a bit)...reheat and pour over two scoops of vanilla ice cream or gellato.
